Early Detection- Listen to Your Symptoms
Our parents made sure to take care of us when we were young, and took us to the doctor when we complained of pain. For many adults, their children are still their priorities, and even though our parents get older, they sometimes forget to pay attention to their own symptoms, and let warning signs go unnoticed. As you know, early detection is the most important step towards treating oncology, and since the year is quickly coming to an end, I'd like to remind everyone to book an appointment to see the doctor if you or your parents have any (even minor) health complaints.
Although some cancers don't exhibit any symptoms, for the most part, like pancreatic cancer, or some high-grade gliomas (VI) stage brain cancer, you may still notice slight differences in health. My mother didn't know about her brain tumor, even though it was the size of an orange up until her seizure and collapse. Ladies, since our face is the mirror of our internal health, if you notice any recurring pustules on the chin, it is advisable to see the gynecologist, because that area is directly linked to our reproductive system and ovaries. This type of blemish on the face may signify ovarian cysts, or worse. Blemishes between the eyebrows can signify poor liver health, and an abdominal ultrasound and MRI are highly advised.
Personally, I never allow X-Rays and CAT scans to be performed on me or my loved ones, unless it is of life and death importance. Both of these diagnostics carry substantial doses of radiation, and as we know, radiation is cumulative in our bodies. An absolutely safe test is an MRI, it is just a magnet, and can even be done daily.
Please take care of your health, and the health of your loved ones. Health and love is all we need to lead a happy and fulfilled life, and everything else will come.

"Gemstone" Red Quinoa Breakfast That Will Power You Up Without Weighing You Down!
This breakfast is just delicious! It will give you energy throughout the day, provide with lots of fiber, and pack a powerful punch of protein to fuel those hard-working muscles! I work out 4 days a week, and I can honestly tell you - "you are what you eat"! All calories are not created equal - you can have a 400 calorie fast food sandwich filled with preservatives, sodium, artificial flavorings, and trans fats, OR you can take 15 minutes in the morning and make a meal that will make your body look and feel year younger! Health will always shine through your skin, and give you clarity and vibrance that is easy to spot!
My eyes are always sparkling because I take care of what I eat, and pay attention to how my body feels. I listen to my body, and that is the reason I don't keep a scale in the house. Winter is the time when our bodies naturally put on a bit of weight to protect ourselves from cold and "provide for the long months of famine", and that is okay! Just be in tune with yourself, and know when it's time to get back on track. I never quit my workouts, even during the Holidays. Don't beat yourself up for skipping your workouts, but don't give yourself a million excuses why not to be active, either. Just think about your body, it's the only one you have in this lifetime, so make sure you treat it with love, and you will see how well it treats you back!
I love an easy, vegan breakfast, and this one is sure to put a spring in your step :) As you know, quinoa is full of protein, and comes in 3 different colors - white, red and black. The white quinoa is fastest to cook, black takes about 5-7 minutes longer, and red is somewhat in the middle of the spectrum. I usually bring the pot to a boil, cover with a lid, and keep for 7 minutes. The red quinoa is tougher than white, so you will need to add 5 minutes to your cooking time to make it softer!
This is the easiest recipe ever - no dicing, slicing or prepping!
INGREDIENTS (I only use organic):
1/2 cup red quinoa
3 large dates
3-6 dried unsulfured apricots
1 tbsp raisins
1 tbsp pumpkin seeds
1/4 cup nuts
pinch of cinnamon to taste
Add 1/2 cup dry quinoa and 1 cup water to the pot and bring to a boil. Let boil for 5 minutes, cover with lid, and keep for about 7 minutes. When you open the lid, you should see that all water has evaporated. Add the warm quinoa to the dried nuts and fruit, and sprinkle with cinnamon! Enjoy, and have a powerful day!

15 Minute Vegan Lettuce Tacos
I love weekends, and you can bet I would rather spend more time with my friends and family, than toil away in the kitchen! For this reason, I would like to show you a lunchtime snack your family will adore! I call these little lettuce bowls my 15 minute vegan tacos. You can work with whatever ingredients you have on hand - today I had zucchini, cherry tomatoes, garbanzo beans, and cilantro. Easy no cook recipe calls for:
INGREDIENTS (I only use organic):
Zucchini 2 medium
Butter Lettuce
Garbanzo Beans, boiled 1 cup
Cherry Tomatoes 1 cup
Cilantro 1/4 cup chopped
Juice of 1/2 Lemon
Flaxseed oil 1 tablespoon
Sea Salt to taste
I use my beloved spiralizer to make zucchini noodles, add to that the garbanzo beans, and the cherry tomatoes. I cut mine in half to make it fit in one bite down on as you eat. Add the cilantro, lemon juice, and oil, and combine well. Scoop this mixture into the lettuce, and serve! I suggest just eating these like tacos - it gets a bit messy, but it's out of this world delicious! I am disappointed that my avocados were too hard, but an avocado would make the PERFECT topping for this taco!
Hope you try this little fun "salad" for lunch today, and feel light and energized all day long!

Exfoliation - From Ancient Times to Modern Day Esthetics
As skin care professionals, we know the importance of skin exfoliation for healthy cell turnover, a refreshed, clear complexion, and better product absorption, but do you know enough methods of exfoliation? No one way of exfoliation is perfect for all skin types, so I would like to mention many possible alternatives in this article, in hopes to inspire you to select from all the possible options!
To make things as simple as possible - there are 2 types of exfoliators - physical and chemical. Everything that is used to mechanically slough off the dead skin is referred to as “physical exfoliation”. This includes methods such as a scrub, microdermabrasion, and a rotating sonic brush to scrape off the dead skin cells with friction. This is a very easy way to refresh the skin, and it appeals to both men and women.
The easiest and most affordable exfoliating products to use at home are scrubs, and since the skincare market is highly abundant, you are guaranteed to find a natural product to your liking! I am a firm believer in natural ingredients, and I strongly advise you against the use of scrubs with microbeads. Microbeads are tiny round plastic beads that are found in some exfoliating products, and they are causing quite a stir in the environmental world. The plastic waste caused by these microbeads, which are not filtered out during sewage treatment, is damaging water ecosystems and killing marine life. A 2013 research at the University of Wisconsin-Superior showed that there were 1,500 to 1.7 million plastic particles per square mile in the Great Lakes! Not only are the beads damaging to fish, they are also bad for your face - microbeads can cause eye irritation, and promote rosacea and couperose. It’s no wonder that Illinois was the first state to ban the use of microbeads in June of 2014, and I sincerely hope all other states will quickly follow.
Instead of using plastic beads, consider other natural options like scrubs with ground up seeds and stone pits from apricots/peaches, crushed walnut husks, oats, coffee grinds, salt, and sugar. I especially recommend sugar for clients dealing with eczema since it’s non irritating on broken skin, and sea salt for psoriasis sufferers, but not more than once a week. All other scrubs can be used 3 times a week, but not more - our skin needs adequate time to amass dry dead cells, and you definitely don’t want to over-exfoliate!
These are just some examples of biodegradable ingredients that will not damage the environment, and will polish and refresh your face. Scrubs are affordable, since the ingredients are typically not too complex, and can range from larger ground formulas (for the body) to finely ground (for the face). I like the simplicity a scrub offers, especially for teens, and male clientele, but not everyone will benefit from them! See my list below for reference on what type of client should not be using a scrub.
Clients with these conditions should avoid scrubs:
- Acne/ Cystic Acne
- Couperose
- Rosacea
- Elderly Clientele
The main reason I discourage acne clients from using a scrub, is because the rough particles in the scrub will not only damage and irritate the skin, causing redness, but in the case of acne, they will spread bacteria on the face, worsening the situation. For this same reason, I don’t recommend getting microdermabrasion treatment, or using a rotating sonic brush for clients who have acne, couperose or rosacea. These types of treatments are too rough, and should be avoided. Older clients tend to have thinner skin, which bruises and breaks easily, and using a harsh scrub, or any other mechanical mode of exfoliation, will cause damage, and pain. I recommend a gentle enzymatic exfoliation, or, if you must, a light oatmeal scrub.
Did you know that scrubbing, peeling and chemical exfoliation all have their roots in ancient Egypt? Egyptians used specks of alabaster combined with milk and honey. The earliest chemical exfoliant was lactic acid, an active ingredient of sour milk that was used by the nobles as part of a skin rejuvenation regimen. In the Middle Ages, old wine with tartaric acid as its active ingredient was used for achieving the same results. Both of these exfoliants are known to contain α-Hydroxy acids (AHAs), which are the active ingredients responsible for the skin exfoliation. AHAs are naturally occurring organic carboxylic acids with a hydroxyl group in the a carbon position. Lactic, glycolic, citric, and tartaric acids are naturally found in sugar cane, fruits, wine, and milk.
German dermatologist Paul Gerson Unna first described the properties of salicylic acid, resorcinol, phenol, and trichloroacetic acid (TCA) in 1882, and the development of other peeling agents for varying depths of penetration followed. In the 1960s, the Baker-Gordon phenol peel peaked in popularity, but by the 1990s, it was falling out of favor with practitioners because of complications and serious systemic renal, cardiac and hepatic toxicity to melanocytes causing hypopigmentation (loss of skin color). After this issue was discovered, only fair-skinned patients were allowed to use phenol peels, and had to go through the process slowly, and cautiously.
Enzymes are a wonderful way to safely exfoliate the skin - this has been my favorite method for years! An enzymatic exfoliation is a good natural way to clean out the pores, get rid of excess oils, slough off the dry and dead skin for a healthy cell turnover. Fruit enzymes, such as Bromelain (from pineapple) and Papain (from papaya) eat away at the oils and dry skin, to expose a refreshed, clear complexion. Enzyme masks are generally more gentle and more safe than acids, and don’t thin the skin like Retin-A. A good natural enzyme mask brightens the skin, activates cellular function, increases circulation, fades discoloration and leaves the skin feeling and looking fresh, smooth and healthy.
Dry enzyme masks that are activated moments before application are more potent, and have a longer shelf-life than pre-activated gel-like masks. This type of facial exfoliant usually comes in the form of a mask based on marine clay, bentonite, or oats. This is my favorite type of enzyme mask, because it’s more gentle than an enzyme peel, which generally contain 10% to 30% AHA, and is not suited for everyone. An example of such a product would be a pumpkin peel. It is quite strong, so please refer to my guidelines before administering it. Just like a chemical peel, please administer an enzyme peel with caution, making sure your client is a good candidate for the product.
Clients with these conditions should avoid peels:
- Acne/ Cystic Acne
- Couperose
- Rosacea
- Elderly Clientele
- Tan or Sunburned / Using Tanning Bed
- Hypopigmentation Sufferers
- Type V and VI on the Fitzpatrick Scale
My rule of thumb, is that the client should always come out of the treatment room looking much better than when she entered, so I refuse to administer any harsh peels that cause redness, irritation, or scabbing. Take your peace of mind into consideration, and just assume everyone has sensitive skin when starting a treatment - it’s an approach I have been using for years, and it hasn’t failed me yet!
I sincerely hope this information was helpful in navigating you through the different types of exfoliants available on the market today! Of course, the best way to learn about your new product is by examining the label, so I encourage you to make this a habit. You will easily be able to select the best products for your clients, and they will forever appreciate your knowledge and care!

Vitamin L
Are you getting enough Vitamin L? There have been reports of people struggling with Vitamin L deficiency lately, and it's extremely dangerous! Vitamin L (LOVE) should be present in your body at all times of the day. You can get 20% from sunshine and fresh outdoor air, 20% from pets, and family members, but most importantly, you are responsible for finding this vitamin within yourself and bringing it to the surface. Some people don't realize the importance of self-LOVE, and ignore the symptoms, such as jealousy towards others, low self-esteem, negative body image, and bad habits. Start practicing the Vitamin L game daily - just ask yourself, if self-love and love for others were a vitamin, would I get my dose today?

Peptide Combinations in Skin Care
—Which formulations/combinations is your company currently exploring and why (how they work, skincare benefits, etc)?
We love peptides, and the best combination that we have found to work well against wrinkles has been Acetyl Hexapeptide-8 (Argireline®) with Matrixyl ™3000. Acetyl Hexapeptide-8 (Argireline®) improves wrinkle depth, wrinkle volume and roughness. Matrixyl ™3000 minimizes crow’s feet and laugh lines, and prevents from further damage and wrinkle formation.
—Are delivery systems (into the skin) an issue? How is that addressed in your formulas?
Usually, peptides are best absorbable when used in a water-based serum, with the addition of low-molecular weight Hyaluronic Acid. This is the formulation behind SAIAN Active Renewal Serum.

—This topic can easily get confusing for even the most well-versed esthetician: what advice can you give for ways to sort through all their peptide product options, and to interpret labels?
As we all know, ingredients are listed on the label starting with the most prevalent to the least prevalent. It’s important to choose a product which is water-based, and has peptides in the beginning of the ingredient list – this way you can be assured of the amount of peptides in the formula. You may also consult the manufacturer, and ask what percentage of a given peptide is used. Usually, 10% of each peptide is sufficient to give great results, if there is a blend of 3 or 4 peptides in a formula. Our serums have 6 peptides!
—Which peptide/peptide or peptide/other ingredient combos do you think should be avoided and why?
Avoid peptide combinations that are mixed with hydroquinone, parabens, and other toxins that can irritate the skin.
—What do you envision for the future of peptides in skin care?
The future of peptides most likely lies in skin-repairing copper-peptide complex, and in all natural paraben-free combinations.

Selecting a Moisturizer
Is the overwhelming amount of moisturizers on the market causing you confusion? When to apply a creme? What about a serum? When to apply ampoules? What about a collagen spray? Do you really need all that "stuff"?
Before making any recommendations, I like to conduct a client consultation, to analyze my client's skin. For anyone with dry, and very dry skin, I always recommend to start with a moisturizing milky cleanser twice a day. This way you know that all steps in your daily routine are designed to hydrate.
When it comes to moisturizing the skin, a serum always comes first! Remember, a serum has a watery, oil-free formula, that is easily absorbable by the skin. This type of product is ideal for application around the delicate skin if the eyes, and the nasolabial folds. Most serums tend to be ionizable, and can be penetrated with a galvanic machine. This is a great way to get the best results from the active ingredients in the product! You don't need any big professional equipment - there are a number of hand-held units available on the market, that work as well as the large machine, and sometimes even better! Here is a link to a previous blog entry about the hand-held machines.
After applying a serum, it's best to apply a creme. The reason for this, is that a creme creates a barrier that helps keep the serum from evaporating. Since serums don't have oil, they penetrate quickly, but don't feel like they are moisturizing enough. Most of the time, serums leave a tight feeling on the skin. After application of creme, the skin will feel softer, more shiny and moisturized.
Ampoules and extremely liquid serums are best used under masks, especially collagen masks. Never wash the face after removing that product - remember, you are penetrating nourishing ingredients, so everything will stay on the skin after application.

Simple Advice That Will Help You Re-Charge Your Body and Mind!
Want to boost your metabolism, oxygenate your body, aid your digestion, and re-energize? My simplest advice to you is:
1. Drink more water! We often can't think logically, get fatigued, dehydrated, and lazy just because we are lacking water in our system. A lot of times we end up over-eating, because we can't tell when we are genuinely hungry for a snack - often just water would be sufficient. (and no, coffee, juice, and soda don't count)
2. Become more aware of your breathing. Are you taking in enough oxygen? Can you feel your ribcage expanding when you take a breath? Take time and sit upright. Really pay attention to your breath, and breathe until you feel your fingertips and toes tingling with energy!Tuesday, December 9, 2014
Superfood Salad! Just What The Doctor Ordered! ;)
My love for healthy food is eternal, can you tell? Since I work during the day, pretty much 9-5, the best food to prepare for next day's lunch is a cold quinoa salad! While this beauty is in the fridge, it marinades in its own juices, and becomes even more flavorful! I wanted to incorporate all the superfoods that boost your immunity, pack a powerful punch of protein, balance the body's pH, and provide you with vitamins, calcium, and brain-healthy Omega -3 oils! Doesn't that sound amazing? Sure does, but it tastes even better! Hope you love garlic!
Ingredients: (I use only organic)
Quinoa 1 cup
Walnuts 1/4 cup
Raw Cranberries 1 cup
Kale 3 cups
Garlic 3 cloves
Barlean's Flaxseed Oil 1 tablespoon
Parsley (garnish)
Pinch of Sea Salt
Rinse the quinoa thoroughly, and put in a pot with 2.5 cups water. Quinoa is a bit different from rice, and it needs more water to plump up, but still remain flaky, not clumpy and lumpy. After the pot starts to boil, turn off the heat and cover with a lid for 10 minutes.
At the same time that the water with quinoa is taking to boil, heat up a skillet on very low heat, and toss in the walnuts, making sure to keep stirring them with a wooden spatula. Once you see that the walnuts are looking just a bit darker (not brown!), take them out to cool on a separate plate. Place the kale in a deep bowl with pinch of salt and the flaxseed oil, and "massage it". Massaging kale ensures that it is soft, absorbs the oil, and is easy to chew. This is just like kneading a dough, when you squeeze it in your hands. You can also sing while doing this - makes the process more festive. :) Set this bowl aside - you will add the rest of the ingredients to it in a moment.
Lightly oil a pan with flaxseed oil, and add the garlic. Once the garlic begins to sweat, add the cranberries (really) and toss until soft. Add this mixture to the bowl with the kale, then toss in the toasted walnuts and the quinoa. Mix well, and enjoy hot or cold! I just garnished it with curly parsley, so it looks like a Christmas tree! Delicious and absolutely alkaline! This food will not cause you to gain weight, bloat, have indigestion, GERD, and any stomach upsets! This is my healthy superfood super-secret, and now you know it too!

Radiation and Our Health
For the past 2 years, I have spent countless hours trying to connect the dots, and find the reason for my mother's sudden illness. She was living an incredibly healthy lifestyle, eating mostly a plant-based, all-organic diet, dancing salsa 3 nights a week, hiking, traveling, singing, lecturing, and enjoying her work as a CEO of a world-famous brand.
Why do some people get cancer, and what contributes to cancer cells firing? Simply put, cancer is the uncontrolled growth of cells. In a healthy body, natural processes control the rate at which cells grow and replace themselves, as well as the body's processes for repairing or replacing damaged tissue. Changes occurring at the cellular level disrupt the control processes, permitting the growth of cancer cells. A big factor in breaking chemical bonds in atoms and molecules is radiation, that's what makes it such a powerful carcinogen. Radiation causes mutations in the DNA blueprint, and contributes to cancer cells spreading uncontrollably. This became apparent in the early 1900s, when people working around radioactive matter and x-ray equipment began to develop skin cancer.
We all know about Chernobyl, Hiroshima and Nagasaki, but did you realize that we are receiving large amounts of radiation on a daily basis? Everything, from using your microwave to using your cell phone, to airplane travel, and all sorts of medical procedures. All of this adds up in our system, potentially causing us health problems down the road.
I want to start by giving you some numbers, so that you may adequately compare the amount of radiation received at every exposure. The effects I will talk about are stochastic effects - meaning low-level long-term effects of radiation that pile up and lead to damage. There are also non-stochastic effects that are instantly apparent after a heavy dose of radiation, such as burns and nausea, and usually death within the next 2 months.
The scientific unit of measurement for radiation dose, commonly referred to as effective dose, is a millisievert (mSv). Because different organs have varying sensitivity to radiation exposure, the actual radiation risk to different parts of the body from an x-ray procedure varies. The term effective dose is used when referring to the radiation risk averaged over the entire body. Here is a chart which reflects
Plainly said, 5 CAT scans in your lifetime, and the chance of cancer is almost certain. This is the reason why x-rays and CAT scans are very important decisions, that shouldn't be taken lightly. Pregnancy is a contraindication for CAT scans and x-rays, because of high risk of mutation and birth defects.
Lastly, I want to talk about mundane radiation we receive from using our phones, laptops, and iPads, and how to reduce it.
Cell phones and other mobile devices emit radiofrequency (RF) waves, a type of non-ionizing electromagnetic radiation (commonly called “cell phone radiation”). When you hold or carry a mobile device close to your head and body, you can absorb over half of the transmitted RF energy.
Cell phone radiation level varies from device to device and is measured by the Specific Absorption Rate (SAR). A mobile device’s SAR rating is used to estimate the maximum rate of RF energy absorption by a user’s head and body when using the device. In the United States, the Federal Communications Commission (FCC) sets the exposure limit for the general public to be an SAR level of 1.6 watts per kilogram (1.6 W/kg). A mobile device’s SAR rating must not exceed 1.6 W/kg in order to receive FCC certification and be sold in the United States. SAR is measured for placement of the phone next to the head and on the body. For example, the iPhone 6 has a Body SAR of 1.14 W/kg and Head SAR of 1.08 W/kg.
Furthermore, you may not be aware that the current FCC guidelines allow a device to be tested up to 25 mm away from the user’s body. Distance is a key factor in determining the amount of exposure from a device – the intensity of radiation increases rapidly as you get closer to the device. As a result, when you carry your device directly against your body, you may be exposed to radiation levels that exceed the device’s SAR rating and even the FCC exposure limit. For instance, if you place an iPhone 5 in contact with your body, your body exposure may exceed the FCC’s limit by more than 4 times. That’s why all cell phone manufactures include warnings in their user’s manuals to keep the cell phone a certain distance away from your body for safety concern. For example, you can find RF exposure information for Apple devices here. Apple even includes a proximity sensor in its iPhone 5S, 6, 6Plus and iPads to detect the presence of a user’s body and subsequently reduce the device’s transmitted signal in order to comply with the FCC’s RF exposure limit. - Rong Wang, Ph.D.
This is why you need to protect yourself and your loved ones with a case that directs the radiation away from the head and body, and the case I trust is PONG - you can research it here: http://www.pongcase.com. As you know, I am not affiliated with them, but I believe in sharing valuable information with my friends, and I believe in this brand wholeheartedly. Another important piece of advice I'd like to share with you, is to sleep without your electronic devices nearby. Many people choose to sleep with their phone under their pillow, or next to them on a nightstand, and the same for their laptop. Please disconnect yourself from this habit, and not only will you reduce your radiation exposure, but you will get a peaceful night's sleep with no distractions, rings, or notifications. Take good care of your health and your body, and give it some rest!

My Favorite Green Juice Recipe
I am a true believer in our food being our medicine - there is nothing healthier than fresh, organic fruits and vegetables to bring our body to it's best, most healthy state! This amazing juice rapidly delivers nutrients to the blood stream, invigorating your cells, and increasing your circulation! You will absolutely LOVE it! I use basic ingredients, with an addition of dandelion greens and ginger to spice it up, and get your body vibrating with positive aura! Make this juice if you struggle with acne, and want to clear up your complexion - it is all-alkaline, and will suppress inflammation that causes candida and yeast. If you don't use dandelion greens and dandelion root tea, I highly recommend them! This is nature's amazing liver and kidney cleanser, that has been know to alleviate even cirrhosis and hepatitis c. Here's a powerful green juice combination that will start your morning right:

Casa Hogar Sion Holiday Trip
Hello beautiful friends! I hope you enjoyed my previous post about my last month's Casa Hogar Sion volunteer visit to Tijuana, Mexico. Here are some photos from yesterday's trip to Casa Hogar Sion.
This orphanage houses from 80-100 children at a given time, and it receives ZERO funding from the government, just like all Tijuana orphanages. All the money raised by volunteers and donors goes DIRECTLY for essential supplies for the kids - toothpaste, toothbrushes, toilet paper, shampoo, conditioner, hair gel, school uniforms and other essentials. You can help by monetary donations, or by purchasing the supplies, and bringing them with you on the trip.
These kids are beautiful, fun, grateful and full of promise! As you remember, this volunteer trip is made possible by Corazon De Vida which is a non-profit. The last time I came, I had the privilige of helping out in the kitchen, so I signed up for that task again. It was easy, and a wonderful way to help out. I hope the photos encourage you to join me on the next trip, or to help me raise some much-needed funds. Remember, the money doesn't go to buy toys or fancy clothing - it's directly feeding the children, and making sure they have enough supplies for daily sustenance.

Warm Garlic Quinoa You Will Fall in Love With
Let's talk about quinoa! How many ways can you prepare yours? Ask my friends at www.buyconscious.com , and they will tell you - I just may be the Queen of Quinoa! The Queenoa! :) The Holidays are here, and we sometimes forget to eat healthy. It's so easy to get good quality vegan protein into your diet - just take a look at this easy as pie recipe for warm vegan garlic quinoa! You will want seconds, I guarantee it!
Ingredients: (I only use organic)
Quinoa 1 cup dry
Coconut Oil 2 teasp
Mushrooms 1/2 cup
Raw Cashews 1/4 cup
Garlic 3 small cloves or 2 large
Onion 1/4 cup diced
Cherry Tomatoes 1/2 cup
Yellow Bell Pepper 1/2
Spinach 2 cups diced
Rinse the quinoa thoroughly, and put in a pot with 2.5 cups water and a pinch of salt. Quinoa is a bit different from rice, and it needs more water to plump up, but still remain flaky, not clumpy and lumpy.
At the same time that the water with quinoa is taking to boil, heat up a skillet on low heat, and put in the coconut oil, with onions and garlic. Sweat the onions and garlic a bit, and then add the cashews to soften them up, and then the mushrooms. Once that mix has become caramelized, add the tomatoes and the bell peppers. Keep mixing with a wooden spatula until all ingredients are thoroughly blended. Once you see that the tomatoes have become soft, add the spinach, and take off the heat. The warmth of the quinoa will soften the spinach.
Once the water with quinoa boils, take off the burner and cover with a lid for 10 minutes. After 10 minutes have passed, you will see that the water has evaporated, and now you are left with just the ready boiled grain! Transfer to a bowl, mix in the rest of the ingredients from the skillet, and let cool. The finishing touch was a sprinkling of raw flax seeds, you can also top this beauty with shaved parmesan cheese - it is divine!

My Favorite Banana Cake Recipe
I'm sure, just like me, you all have been disappointed at the sight of overripe bananas in your fruit bowl! Ahh, too ripe! Well, when life gives you lemons, you make lemonade, and when life gives you ripe bananas, you make banana cake! I'm sure you are wondering what the difference between banana bread and banana cake is. Well... I make my banana bread in a bundt pan, and fill it with a rich cranberry compote, so it looks just like a cake, and is festive to boot! You can make this recipe using a regular loaf pan, and it will be just as delicious.
Ingredients (I only use organic):
DRY
1 1/3 cups of unbleached flour
1tsp baking soda
pinch of salt
1 tsp of cinnamon
1 cup toasted walnuts
1/2 cup brown sugar
1/2 cup raisins
WET
1/2 cup olive oil
2 large eggs
1/4 cup plain non-fat greek yogurt
4 ripe bananas
COMPOTE
1 tablespoon honey
2 cups of fresh cranberries
You will need to pre-heat the oven to 350 degrees before you start to work on this cake. I usually have a few big bowls in place for the cake. Combine all the dry ingredients in one bowl, and mash your bananas in the other bowl using a potato masher. In your third bowl, you're going to whisk the eggs, oil, and yogurt together to a consistent mixture. Combine this mixture with the mashed bananas, and mix well. Lastly, add the wet mix to the dry mix, and fold together.
Pour your batter into a pre-greased bundt pan and put it into the oven for about an hour on the center rack. Cool for 10 minutes and remove from the pan. Place on the plate, and now you can make the compote.
Simply add the honey to the cranberries, and stir until soft and caramelized. Pour this mixture into the center of the cake, and voila! Enjoy! I recommend letting it sit a half-hour before tasting, so the compote has some time to absorb into the cake.

Be Thankful. Always.
Thanksgiving has always been my favorite holiday - I love it more than my birthday, New Year's, Christmas, anything! How amazing is it to just spend the day making food for your loved ones, and the evening in their company around the table! No gifts, no fancy clothes, just pure love. I have made Thanksgiving dinner almost every year since the age of 16. Usually for about 10-15 people - I always had my friends and employees over with their families. This year, I am only making dinner for 3 people - my mother, my grandmother, and myself, so I decided to just make a chicken, to not be so wasteful. There is no way 3 people will ever come close to finishing even a small turkey in even 4 days. This month has been challenging for us, and I hope that Thanksgiving will bring some much-needed rest and calm into our situation.
We were scheduled for a clinical trial after our 2nd brain surgery this October, and the FDA closed the trial because someone in another hospital had liver failure. Like a crazy person, I transferred my mother to UCLA's neuro oncology dept, and now we wait to see what clinical trial our 2nd tumor's tissue qualifies for.
For the past 2 years, I have been savoring holidays, because of the sad realization that any one of them could be our last together. I take care of my little family nowadays. My grandma is 84 and my mom is 58, going on 27. I don't just say this because she is breathtakingly beautiful, even in her current state, after 2 months of daily radiation, a year of chemo, a year of physical therapy and clinical trials, and 2 brain surgeries... I say this because she has the most positive and young spirit out of anyone I know! It may sound crazy, but I feel like there is so much I am thankful for, even in my situation. I'm thankful to have two people who love me, by my side. I'm also thankful for the opportunity to take care of these women, and make them proud they have raised me to be a strong woman. Life is too short to only be thankful once a year... I'm thankful for my next breath, and their next breath, and I will be there with them until the last, because love gives me strength.

3 Forms of Exercise I Recommend for a Healthy Body and Soul
You may have noticed that I speak a lot about health, and am an avid advocate of wholesome organic foods, especially mountains of delicious fresh vegetables and fruits! Organic and natural food is extremely important, and plays a tremendous part in our body's functions, pH balance, weight, hormone levels, digestion, and mood. Eating right is a step in the right direction, but a systematic lifestyle of healthy nutrition and exercise is the key to longevity and vitality! There is no one exercise plan that is perfect for everyone, but I believe in 3 key elements of physical activity which strengthen, lengthen, tone, and condition the body, and when practiced often, give the best overall results!
1. Aerobic exercise, such as brisk walks, jogging, dancing, trampoline, bicycle, swimming, and anything else that gets you breathing and oxygenating the body, as well as your blood circulating and moving stagnation. Obesity is a 21st century epidemic in America, and with lack of aerobic exercise, the body can amass a fat padding not only on the outside, but even around the internal organs! All forms of aerobic exercise help to massage the colon, and move waste matter out of the body, therefore detoxifying and cleansing. While we are healthy and strong, we need to adapt to an exercise routine that will build up our endurance, so in the unpredicted case of general anesthesia (GA), the risks of anything going wrong will be minimal. Aerobic exercise is wonderful conditioning for the body - once you get used to this sort of fast paced physical activity, you will never walk up a flight of stairs huffing and puffing ever again! Personally, I never take the elevator - stairs are a great way to get some exercise in during your workday or while running daily errands!
2. Weight training! I hear many opinions on this topic, especially women who are afraid of weight training, thinking that they will look bulky and masculine. Don't fear this form of exercise, because it's a guaranteed method for strengthening muscles, toning flabby areas, and conditioning the body. You don't have to use heavy weights, that is not the most important factor. It's more important to keep correct form, and do these exercises slowly. Never do jerky movements, never strain yourself, and remember to keep your knees softly bent when working with a barbell or free weights. When your muscles are firm, they will hold your internal organs in place, keep your back straight, and burn more calories than fat, even while at rest. Oh, and that's me on the left :) I am not a big fan of bare-midriff selfies, but I am living proof that weight training can keep a lady toned, and still a lovely, curvy size 2. (It may also be all those avocados and quinoa) :)
3. Stretching is incredibly important! I know it may seem useless for most of us to be able to bend over and touch our toes, but believe me, it is essential! Our spine is like a doric column supporting the roof of the Parthenon, except our column (spine) has our spinal cord running through it. Have you been to the chiropractor for an adjustment? He will roll you from side to side, stretch you out, and alleviate any pinching of the nerves that may have occurred in your spine. With regular stretching, you help yourself by allowing the spinal fluid flow freely, reducing the pinched nerves, and lengthening the muscles. Stretching also reduces the buildup of lactic acid in the body, and helps move stagnation. When we get older, with no stretching or weight training, the back can start to collapse forward, forming a hunch which can cause the lungs to collapse and take in a reduced amount of (super-important) oxygen, and the ribcage to press down on the stomach, therefore releasing acid, and causing GERD. A great form of stretching is hatha yoga - it is both enjoyable and beneficial to the body!
Hopefully this advice has been helpful to you, and will get you motivated to incorporate these 3 forms of exercise into your daly routine! I am wishing you health and longevity!
